Tasty Tuesday issue 5: chicken/sausage with rice with a yummy leftover conversion

tasty tuesdays!

Ingredients

Sage Sausage (i buy the “tube” bob evans brand .)

1 lb chicken cut into chunks

2 16 oz cans of stewed tomatoes

2 cans sweet corn

parmesagne cheese

salt

pepper

olive oil

2 cups rice (prepared in your usual fashion)

dutch oven

Start steaming your rice

cook sausage thoroughly in nice little crumbles.. set aside

cook chicken thoroughly in a tsp or 2 of olive oil

add rice and sausage into dutch oven with your chicken

add your stewed tomatoes and corn. mix thoroughly.

top with salt and pepper and parmesagn cheese and Voila.. you have a nice easy fun meal for the kids.

Conversion time for the left overs

2 cans enchilada sauce

2 cups cheddar cheese

1 can cream of mushroom

tortilla.. torn into bite sized pieces

8×8 baker

mix 1 can of enchilada sauce with cream of mushroom soup and set aside

drain the other can into the bottom of the baker

layer with bite sized pieces of tortilla

add your rice mixture from last night over the tortillas.

drizzle half of your sauce over the rice

add half of your cheese

add another layer of tortilla

you can repeat the layer of rice if you have enough left overs.  i normally do 2 layers.

top with the rest of the tortilla sauce and cheese

bake 375 f for approx 45 minutes (nice and bubbly)

let cool for a few minutes

serve and enjoy

my family loves to make piggies of themselves with both of these incarnations.

    I love your fifties art. I’m going to make this this week. I just happen to have a tube of sausage, which i never have. Yay!
