Tasty Tuesday Issue 4: salsa beef with rice

How many of you get near to the end of your pantry before you are able to do a grocery run?? It’s dinner time and the kids are hungry. What to do what to do!! This happened to me last week. I looked in the fridge and a dust ball fell at my feet…err well not really but close enough. I had a 1 1/2 lbs of beef. no spaghetti sauce.. no pasta.. time to scrounge the pantry or have to run out to the convenience store and have a late dinner. Scrounging paid off!! Here is my kid approved scrounging recipe.

Ingredients

1 1/2 lb ground beef

1/4 shredded cheddar (left over from another recipe)

1 small jar of mild salsa

1 (left over) small onion diced

2 cups of dried rice (left at the bottom of the container)

salt

pepper

Prepare rice in your normal fashion. I am lucky enough to have a rice steamer.. love it!

brown beef and drain of fat. (i always rinse the beef at this stage)

brown diced onions.

return beef to frying pan with onions

when rice is done add to the beef and onion mix.

stir in jar of salsa.

lastly add the cheddar cheese.

serve up hot for family.

simple, quick and easy. My boys loved it.

Tip for the day:  Don’t be scared to experiment with what is left over in the pantry.  You may surprise yourself with a new family favorite or the worse case scenario, you end up ordering a pizza 😉
